Chipped Ham Barbecue

1 lb. Figi's Smoked Ham, chipped or shaved
2 Tbsp. butter
4 Tbsp. vinegar
2 Tbsp. water
1½ Tbsp. sugar
1/2 tsp. dry mustard powder
1/4 cup ketchup

Chipped Ham Barbercue
In a saucepan over medium heat, melt butter. Stir in vinegar, water, sugar, mustard powder and ketchup, heating until mixture comes to a boil. Lower the heat and mix in the Figi's Smoked Ham. Cover and simmer for 20 minutes.
Serve hot on toasted bread rolls or hamburger buns. Serves 6.

Creamed Ham

4 Tbsp. butter
4 tbsp. flour
1/2 tsp. salt
1/4 tsp. black pepper
1/2 tsp. onion powder
1/4 tsp. garlic powder
2 cups milk
2 Tbsp. fresh flat-leaf parsley, chopped
1 lb. Figi's Smoked Ham, shaved or thinly sliced

Creamed Ham
In a saucepan over medium heat, melt butter and whisk in flour. Cook for 2 minutes, stirring occasionally. Add in salt, black pepper, onion powder, and garlic powder. While whisking, slowing pour in milk. Continue cooking until sauce thickens. Lower heat, then add Figi's Smoked Ham and parsley, simmering until sauce starts to bubble. Delicious served over pasta, split buttermilk biscuits or toast.

Lemon Pepper Salmon Spirals

8 oz. Figi's Lemon Pepper Salmon, flaked
8 oz. cream cheese, softened
1½ tsp. fresh lemon juice
1½ tsp. lemon rind, grated
1 green onion, minced
1½ Tbsp. fresh dill, minced
1 tsp. paprika
4 10-inch flour tortillas
1 Tbsp. small capers, drained

Beat together cream cheese, lemon juice and rind, green onion, dill and paprika. Stir in capers. Spread each tortilla with one quarter of the cream cheese mixture and then top with one quarter of the salmon. Roll up the tortillas tightly. Wrap each rolled tortilla in plastic wrap and chill for a few hours. To serve, slice the rolls 3/4-inch thick. Arrange the slices on a serving dish and garnish each with a tiny sprig of dill. Makes about 40 spirals.

Smoked Sockeye Salmon Quiche

9-inch pie crust
3 large eggs
1½ cups heavy cream
1/2 tsp. salt
4 oz. Figi's Buttery Baby Swiss Cheese, shredded
2 Tbsp. butter
1/2 cup fresh mushrooms, sliced
2 Tbsp. green onion, minced
1 Tbsp. fresh dill
8 oz. Figi's Smoked Sockeye Salmon
Pinch of pepper

Smoked Sockeye Salmon Quiche
Preheat oven to 425°. Prepare pie crust and line a 9-inch pan. Mix together cream, eggs, and salt. Stir in Figi's Buttery Baby Swiss Cheese; then set aside. Saute green onions and mushrooms over medium heat for 5-6 minutes in butter until tender; then add to cream mixture. Flake Figi's Smoked Sockeye Salmon into mixture along with dill and black pepper; then pour into the pie crust. Bake at 425° for about 15 minutes, then lower oven to 350° and continue baking for another 30-35 minutes until the center is set. Excellent served warm or cold with your favorite salad.
