What Can You Do with Leftover Cheese?
Make Cheese Sauce!

  • 2 tablespoons of cornstarch (varies)
  • Milk
  • Cheese - Cheddar or Parmesan are good choices
  • Salt to taste

Select a small to medium sized microwave-safe dish, and grate cheese into it, about an inch or so deep. Pour a tablespoon or two of milk into the cornstarch and make a slurry, making sure all of the cornstarch dissolves. Pour cornstarch mixture and enough Cheese Sauce milk over the cheese to cover it. Stir everything together with a fork, making sure to mix the cornstarch in and dissolve it completely.

Cover the dish and microwave two minutes. Stir every couple of minutes. Repeat the microwaving and stirring until the sauce blends and thickens. It's ready when it looks smooth and thick. Add salt to taste. Pour cheese sauce over pasta, veggies, or rice.
